Buttermilk Scones with Lavender and Lavender Honey
Makes 1 dozen scones
1 ¾ cups sifted all-purpose flour
1 tablespoon sugar
1 ½ tsp baking powder
½ tsp baking soda
½ tsp salt
¼ cup shortening
¼ cup butter
½ cup buttermilk
1 tablespoon lavender blossoms (dried) or 2 tablespoon fresh flowers
Preheat oven to 450 degrees F
Heat buttermilk to warm, add lavender & remove from heat. Steep for about 20 minutes. Mix flour, sugar, baking powder, baking soda, and salt in a bowl. Cut in shortening and butter with a pastry blender until particles are the size of rice kernels.
Add the buttermilk and lavender mixture, stir until dough forms into a ball.
Turn dough onto a floured surface and knead lightly with fingertips about 8 times. Divide dough in half and shape each into a round about ½ inch thick. Cut each round into 6 wedge-shaped pieces. Place on an ungreased baking sheet. Bake at 450 degrees for about 10 minutes till the top is lightly browned. Serve warm with butter and lavender honey.
